| Thanks Irish......I almost bought it. I have only tried the skillet corn and the mixed greens....or collards.....both good and no cramps! I'll beware the cabbage. |

Meatballs = 1 pound Ground Chuck, 1 egg, 1 TBS pizza seasoning, 1 TBS grated Parm, some extra garlic and It. seasoning
Chicken Thighs = Lemon juice, Kosher Salt, pepper and garlic
Cooking at 350° indirect

Balls are done

Chicken is done :) Finished them off direct

Barilla Omega-3 Pasta, red sauce, added the balls and some Mozzarella cheese. Back to the Oval for about 5 minutes to melt the cheese.

Served with some mixed veggies. The chicken was some of the best I've had :P |

Baby back ribs, baked potato and steamed zucchini and yellow squash. Only got pics of the ribs before and after.

Why am I not surprised to see a pair of guy legs next to that grill?

Mr. R....that really looked delicious! Dragon those ribs look perfect!
And chuck, that grill looks like a redneck's dream!
I am shipping my camera and equipment out west tomorrow, so I won't be posting pics for a while...maybe tonight...we'll see.

Sunday's Soup/stew
No grillin' here y'day, winds too gusty, so put off the lamb racks until tonight. However, I did have the ham bone left from Easter :) Veggie stock, ham bone, garlic, onions, carrots, celery, spices and let all simmer for the afternoon. Added some diced maters and Barilla Plusİ Elbow macaroni. Mrs. Kingfish sent over some fried catfish and scallops to complete the meal.

Greek chicken with Greek salad. I love getting the small whole chicken's from BJs, they are great flat roasted or grilled.

| Starting to plan my big dinner,I always need a couple of weeks of planning as I believe in only fresh ingredients,never evr anything frozen when I entertain.Starting out with two cheese platters,one Daish havarti with cracked black pepper crackers,the other brie with bread and apples for dipping.Then mushroom caps stuffed with crabmeat and cheese and the other hot app will be filet mignon cubed for a hot oil fondue with 3 or 4 dipping sauces such as creamed horse radish and bearnaise.any suggestions for the hot and cold apps would be appreciated. |

| No salad to clog up the belly for the main course which will be fresh cold water maine Lobster split and stuffed with diced shrimp and crabmeat,then drizzled with a white wine butter sprinkle to keep the stuffing and lobster moist.side dish will be real red salt potatoes and of course drawn butterThinking about corn on the cob but must save room for desert which right now I am thinking baked Alaska washed down with slightly warmed Gran Marnier or Cognac.Some guests may opt for coffee with kahlua and whipped cream.Any Suggestions????????????????? |

The only suggestion I have would be to have a vegetable somewhere other than the salted potatos.... but I love veggies so I could be partial.  |

I was concerned about that,hoping the corn on the cob would sort of cover that since I am running out of room on the stove,maybe I'll throw some steamed asparagus with hollandaise sauce and sliced almonds.BTW don't need to deliver if you are sitting at the head of the table. |

I offered to bring a cheesecake. I make a really good New York style citrus cheesecake that is not overly rich yet refreshing. (Ask Toby, he loved it!) That mocha chocolate orange cheesecake also sounded decadent. I want to try a banana foster cheesecake recipe that I have but I'm a little nervous about experimenting with so many people.

At the last minute, Mrs. Rum decided that her 'new' Anchor Hocking casserole dish was NOT going into the grill!
This was made with grilled chicken from Thursday (it's in the recipe section). I also took the left over squash, diced it up, added some evoo, salt, pepper and sauteed it for a couple of minutes.

This is my favorite section of the forum. I can't wait to see what everyone's cooked and their hints & tips (esp Aska (the Pro), but appreciate you all) So I would like to show you our favorites and would love anyone's feedback. Have a smokin' weekend! THis was 2 pork butts from BJ's rubbed & loved for many hours! Would've loved to show you the shredded but I couldn't get near it! Usually do picnic shoulder but this was so much easier and less waste & the dogs loved the bones!!

No everything looked prettier that way and was too hungry to take the time for a complete plate presentation. I use the Goya brand black beans and prepare to the recipe on the can with onions green peppers and minced garlic.
