Finally got back to some cooking last night. Pork chops seasoned with plain ol SP&G, cooked indirect to 125° then slathered with some Black Mustard BBQ Slather and bourbon, a 50/50 mix. Finished direct for about 3 minutes a side. My bastardized Twice Baked Taters consisted of instant taters, sour cream, cheddar cheese and bacon crumbles.

PDG, if I say so myself. Made some tomato salad to go with it.

I don't have any pics....but in the past couple of weeks I have tried some new and very good foods....pistachio crusted pheasant, caribou....the caribou was amazingly tender for wild game.
Lots of buffalo, trout and elk....all delicious....wish we could get those foods here.

Were these items available as entrees in restaurants or did you guys pick the meat up in a grocery store and prepare it yourselves?

All restaurants.....we did have a cooler in the truck, and we didn't have to stop for any junk food, but it was all snacky stuff....apples/nuts/water etc....
Usually the hotels offered something that resembled breakfast, we would have lunch from the cooler, then dinner out. The menus there are full of stuff we don't get here. Such as, the caribou, elk, pheasant, rabbit (sorry Irish) etc...but much of it is farmed. Infact, I believe, all but the caribou are farmed.

You are in luck! I just saw this this morning:
Beatniks is no more.
Beatnik's replacement is Jumpin Java at 1341 S.E. 47th Terrace.
Buxton also plans to add exotic meats, such as elk, buffalo, venison and ostrich, to the business.

For dinner last night Mr Radio made a lovely Greek salad, and pizza. The pizza had soprosetta, capricolla, pepperoni, mushrooms, and homemade sauce. So yummy!

Yummy bruschetta

Black salt roasted potatos, roasted broccoli, and a yummy steak.

Dessert was assorted pastries.

Going to attempt this:
Grilled Banana Splits Servings4 Ingredients 4 ripe bananas 8 teaspoons unsalted butter, cut into small pieces 4 tablespoons light brown sugar 4 tablespoons brandy 3 cups vanilla ice cream 8 teaspoons chocolate sauce 1/4 cup toasted pecans (optional) Directions Heat grill to low. Make an incision lengthwise on the side of each banana, leaving 1 inch uncut at both ends and the skin intact. Spread open the cut and place 2 teaspoons of the butter pieces, 1 tablespoon brown sugar, and 1 tablespoon brandy inside. Grill, covered, until the butter mixture has melted and bananas are heated through — 8 to 10 minutes. Transfer the bananas to 4 separate sundae dishes, carefully flipping the bananas over and pouring the sauce into the bottom of each dish. Peel off the skins, and top each with an equal amount of ice cream; add warm chocolate sauce, and nuts, if desired. Serve immediately.

Started off last night's meal with a simple Shrimp Cocktail, followed by a fresh Mozzarella/Tomato salad. Main course was Crab Cakes, roasted garlic/parmesan taters and some grilled squash. A bottle of some kind of Reisling (good, but I prefer the el cheapo blue bottle!) and dessert was a cinnamon ice cream cake. 'Twas truly good

If you have high cholesterol don't read this. Chicken livers dipped in corn meal and fried in butter and garlic, brown rice and steamed broccoli.

Did a test run on grilled Bannana splits. Someone got a picture. I'll put it up when she sends it. Worked out for the four of us. We were going to try it fo my nieces Grad. open house tommorow, but too much for too many. It's really pretty easy, but doing that much would be a pain. Besides the grill we're using tommorow is huge! Being trucked in.

I'm doing some chicken breasts with Black Mustard Barbecue Slather's soon-to-be sister product: Slather Dust. We're testing versions #3 and #4 tonight.
I'll keep you posted. |
