Faux Crab Salad or "Brûlê Gueule," or "burn mouth," From French patois,
1 lb salted cod 2 onions finely chopped 2 avacado's cubed 2+ limes juiced 1/4+ habanero pepper 1/4 cup veggie oil or very light olive oil 1 tomato chopped (remove seeds)
Wash and soak saltfish, overnight if possible. Strip into pieces. Afterwards, wash and squeeze in water. Repeat to remove excess salt. Squeeze to dry. Add finely chopped onions, hot pepper, tomato, lime juice and salad oil. Toss to blend until oil is absorbed. put into bowl and garnish with avacado cubes. refridgerate for at least 2 hours. serve with thin sliced, lightly toasted French bread really good hot weather food, and many people will think this is a crab salad.  also posted in Comfort Foods thread.
