Italian Sub roll
Turkey breast
Ham
Bacon
Provolone Cheese
Sun dried tomato Cream Cheese
Pesto
Tomato
Lettuce
Salt and Pepper

Chop up sun dried tomatoes, and place in a bowl with 1/4 of a package of soft cream cheese. Stir until completely combined. Split the Italian loaf in half, spread pesto on the 'bottom' and the sun dried tomato cream cheese on the 'top'.

Stack on all of the other ingredients, I used 2 slices of ham, 2 of turkey, 1 slice of provolone, 2 slices of thin bacon, and a healthy heap of lettuce and tomato for every 6 inches of sub. Place the sub on a pan, then cover with another pan, and weight it down with water jugs, or big cans. Let it sit for at least an hour.

(If you make the weight heavy enough, it will discourage someone from running off with your sandwich!) Cut the sandwich on a bias, every 2 inches, and enjoy!

Pesto:

1 1 oz package of Basil
1 1 oz package of mint
1 cup of pine nuts
1 cup of olive oil

Stick all of the above in a food processor, and blend until fully incorporated.

Place in a bowl, and fold in 1/2 cup of parmesan cheese.

OH! I was way off, I was thinking there was like a pesto bean or something that got smushed that would like an avocado....yes, folks, tis true I'm an au naturale blondie at times. <sigh>

You can also buy pesto in a jar at the grocery store. Not sure how it compares to the real deal, though.

I'm bumping this to the front....I don't to scroll down again. My neighbor's father died...and I'm going to make this and take it over there on Friday Night. I think this will make a nice meal or something they can offer for the gathering after the service at the cemetary on Saturday. (sigh)
